Description

A lighter take on the classic Caesar salad featuring crisp romaine lettuce, crunchy roasted chickpeas, and a creamy Greek yogurt dressing. This flavorful and satisfying salad is perfect for a healthy lunch, dinner, or side dish.


Ingredients

1 can chickpeas, drained and rinsed

1 tablespoon olive oil

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt to taste

Black pepper to taste

2 romaine hearts, chopped

1/4 cup grated Parmesan cheese

1/3 cup plain Greek yogurt

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 teaspoon soy sauce

1 garlic clove, minced

2 tablespoons water

Whole grain croutons for serving


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat the chickpeas dry and toss with olive oil, garlic powder, smoked paprika, salt, and black pepper.
  3. Spread the chickpeas on the baking sheet and roast for 30–35 minutes, shaking the pan halfway through, until crispy.
  4. In a small bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, lemon juice, soy sauce, minced garlic, and water until smooth.
  5. Place the chopped romaine lettuce in a large bowl.
  6. Add the Parmesan cheese and drizzle the dressing over the lettuce. Toss well to coat evenly.
  7. Top with roasted chickpeas and whole grain croutons before serving.

Notes

Add grilled chicken for extra protein and a heartier meal.

Substitute kale for romaine lettuce for a sturdier texture.
