Description

Are you looking for a satisfying weeknight dinner that the whole family will love? Look no further than this Mashed Potato Meatloaf Casserole! This hearty dish combines the classic flavors of meatloaf with creamy mashed potatoes, melty cheddar cheese, and crispy bacon, all baked together for an unforgettable meal. It’s comfort food at its finest, perfect for busy evenings or cozy family gatherings.

Ingredients

For the Meatloaf:

1 ½ pounds ground beef (85/15)

¼ yellow onion, finely chopped

⅔ cup seasoned dry breadcrumbs

⅓ cup whole milk

1 large egg, lightly beaten

½ teaspoon kosher salt

¼ teaspoon coarse ground black pepper

For the Mashed Potatoes:

2 pounds potatoes, peeled and cut into 1-inch chunks

⅓ cup unsalted butter

½ cup whole milk

1 teaspoon kosher salt

¼ teaspoon coarse ground black pepper

Toppings:

½ cup bacon bits, cooked and crumbled

1 cup cheddar cheese, shredded

Instructions

  1. Preheat the Oven: Preheat oven to 375°F (190°C).
  2. Prepare Meatloaf: In a large bowl, gently combine the ground beef, onion, breadcrumbs, milk, egg, salt, and pepper. Press the mixture into a 9×9-inch baking dish.
  3. Bake Meatloaf: Bake uncovered for 15 minutes, then remove from the oven and drain any excess fat.
  4. Cook Potatoes: While the meatloaf is baking, boil potatoes in enough water to cover until tender, about 15 minutes. Drain.
  5. Make Mashed Potatoes: Add milk, butter, salt, and pepper to drained potatoes and mash until smooth.
  6. Assemble Casserole: Spread mashed potatoes over the meatloaf. Top with cheddar cheese and crumbled bacon bits.
  7. Final Bake: Bake for an additional 15 minutes, or until cheese is melted and bubbling.

Notes

Feel free to customize the meatloaf by adding vegetables like bell peppers or carrots for extra nutrition.

To add more flavor to the mashed potatoes, consider mixing in garlic or sour cream.

For leftovers, store in an airtight container in the refrigerator for up to 3-4 days.
