Description

Ingredients

2 pounds pearl onions, peeled

4 tablespoons butter, melted

3 cloves garlic, minced

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1 cup smoked beef sausage, sliced

1 tablespoon olive oil

2 tablespoons chopped fresh chives

1 tablespoon chopped parsley

Lemon wedges, for serving


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the peeled pearl onions in a large baking dish.
  3. In a small bowl, combine the melted butter, garlic, Cajun seasoning, smoked paprika, salt, and black pepper.
  4. Pour the butter mixture over the onions and toss until evenly coated.
  5. Add the sliced smoked beef sausage and drizzle with olive oil. Stir gently to combine.
  6. Cover the baking dish with foil and bake for 30 minutes.
  7. Remove the foil, stir the onions and sausage, and continue baking uncovered for 15 to 20 minutes until the onions are tender and lightly caramelized.
  8. Garnish with chopped chives and parsley.
  9. Serve warm with fresh lemon wedges.
