Description

Fluffy, creamy scrambled eggs with tender mushrooms, fresh spinach, and aromatic garlic make a delicious, protein-rich breakfast in just 10 minutes. This easy one-pan recipe is perfect for busy mornings or a satisfying weekend brunch.

Ingredients

4 large eggs

1/2 cup mushrooms, sliced

1 cup fresh spinach

2 tablespoons milk or cream

1 tablespoon butter or olive oil

1 garlic clove, minced

Salt to taste

Black pepper to taste

1/4 cup shredded cheese (optional)

Instructions

  1. Wash the fresh spinach, slice the mushrooms into thin, even pieces, and mince the garlic. Set everything aside.
  2. Heat a non-stick skillet over medium heat and add the butter or olive oil. Add the sliced mushrooms and sauté for 3–4 minutes until tender and lightly golden.
  3. Stir in the minced garlic and cook for approximately 30 seconds until fragrant. Add the fresh spinach and sauté for about 1 minute, just until wilted.
  4. Crack the eggs into a medium bowl. Add the milk or cream, salt, and black pepper. Whisk thoroughly until smooth and well combined.
  5. Reduce the skillet heat to medium-low and pour the egg mixture over the cooked mushrooms and spinach. Gently stir with a silicone spatula, moving the eggs slowly across the skillet to form soft, creamy curds.
  6. When the eggs are almost set, sprinkle in the shredded cheese if using. Gently fold until the cheese melts, then remove the skillet from the heat while the eggs are still slightly soft.
  7. Serve immediately while the Mushroom Spinach Scrambled Eggs are warm, fluffy, and creamy.

Notes

Mushroom options: White button, cremini, baby bella, or shiitake mushrooms work well. Sauté until lightly golden for the best savory flavor.

Cheese variations: Add shredded cheddar, mozzarella, Parmesan, or crumbled feta for extra creaminess and flavor.

Mediterranean variation: Add chopped cherry tomatoes, crumbled feta, and a pinch of dried oregano.

Spicy variation: Add crushed red pepper flakes, diced jalapeños, or a dash of hot sauce.

Extra protein: Replace one whole egg with two egg whites or serve with cottage cheese.

Dairy-free option: Use olive oil instead of butter, omit the cheese, and replace the milk with unsweetened dairy-free milk or water.

Breakfast wrap: Spoon the cooked eggs into a warm tortilla with avocado slices or salsa.

Frozen spinach: Thaw completely and squeeze out excess moisture before adding to the skillet.

Fluffy egg tip: Whisk the eggs thoroughly, cook over medium-low heat, and remove from the heat while slightly soft to prevent overcooking.

Milk substitute: Omit the milk or cream entirely, or add a tablespoon of water for a lighter texture.

Serving suggestions: Serve with whole-grain toast, avocado, roasted potatoes, fresh fruit, or a tomato salad.

Refrigeration: Cool slightly, transfer to an airtight container, and refrigerate promptly for up to 3–4 days at 40°F (4°C) or below.

Freezing: Freeze fully cooked scrambled eggs in a freezer-safe container for 1–2 months for best quality. Mushrooms and spinach may release moisture after thawing.

Microwave reheating: Place in a covered microwave-safe dish and heat in short intervals, stirring occasionally, until the eggs reach 165°F (74°C).

Stovetop reheating: Warm gently in a non-stick skillet over low heat with a little butter or olive oil until thoroughly heated.

Meal prep: Cook the mushrooms and spinach ahead of time and refrigerate separately. Prepare fresh scrambled eggs when ready to serve.
