Ingredients

For the Base Layer:

½ cup unsalted butter, melted

¼ cup granulated sugar

5 tablespoons cocoa powder

1 large egg, beaten

1 teaspoon vanilla extract

1 ¾ cups graham cracker crumbs

1 cup sweetened shredded coconut

½ cup chopped walnuts or almonds (optional)

For the Custard Filling:

½ cup unsalted butter, softened

2 cups powdered sugar

2 tablespoons vanilla custard powder (such as Bird’s Custard Powder)

3 tablespoons milk

For the Chocolate Topping:

1 cup semi-sweet chocolate chips

2 tablespoons unsalted butter


Instructions

  1. Prepare the Base Layer: Melt the butter in a saucepan over low heat. Stir in the sugar and cocoa powder until smooth. Gradually whisk in the beaten egg and vanilla, cooking for about 2 minutes until thickened. Remove from heat and mix in graham cracker crumbs, shredded coconut, and nuts (if using). Press the mixture into a greased 8×8-inch pan and refrigerate.
  2. Make the Custard Filling: In a bowl, beat softened butter, powdered sugar, custard powder, and milk until smooth. Spread evenly over the chilled base layer and return to the refrigerator for 20 minutes.
  3. Make the Chocolate Topping: Melt the chocolate chips and butter in a microwave-safe bowl in 20-second intervals, stirring until smooth. Pour over the custard layer and spread evenly.
  4. Chill and Serve: Refrigerate for at least 1 hour before slicing into squares and serving.
