Description

This No-Bake Creamsicle Cheesecake blends creamy vanilla cheesecake with bright orange flavor for a refreshing dessert inspired by classic creamsicle treats. Its beautiful swirled appearance and easy no-bake preparation make it perfect for any occasion.


Ingredients

1 1/2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1/2 cup orange juice

1 tablespoon orange zest

Orange food coloring, optional


Instructions

  1. Combine the graham cracker crumbs and melted butter in a bowl until evenly mixed.
  2. Press the mixture firmly into the bottom of a 9-inch springform pan and refrigerate for 10 minutes.
  3. Beat the softened cream cheese and powdered sugar together until smooth and creamy.
  4. Add the vanilla extract and mix until fully incorporated.
  5. In a separate bowl, whip the heavy cream until stiff peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture.
  7. Divide the filling evenly between two bowls.
  8. Stir the orange juice, orange zest, and optional food coloring into one bowl.
  9. Spoon the orange filling into the prepared crust, then add dollops of the vanilla filling on top.
  10. Use a knife to gently swirl the mixtures together to create a marbled effect.
  11. Cover and refrigerate for 4 to 6 hours, or overnight, until fully set.
  12. Remove from the springform pan, slice, and serve chilled.

Notes

For extra flavor, add a few tablespoons of orange marmalade to the orange filling.

Top with whipped cream and fresh orange slices before serving.

Store covered in the refrigerator for up to 5 days.

Freeze individual slices in airtight containers for up to 2 months and thaw overnight in the refrigerator.

Vanilla wafers, digestive biscuits, or golden sandwich cookies can be used instead of graham crackers.
