A comforting one-pan dinner with tender seasoned chicken, fluffy rice, fresh broccoli, and creamy melted cheddar. This easy skillet meal is hearty, family-friendly, and ready in about 45 minutes.
Ingredients
Chicken breast, diced

Instructions
- Heat the olive oil in a large skillet over medium heat. Season the diced chicken with salt, black pepper, and garlic powder, then cook until lightly golden.
- Add the chopped onion and minced garlic. Cook until the onion softens and the garlic is fragrant.
- Stir in the uncooked long-grain rice until the grains are well coated with the oil and seasonings.
- Pour in the chicken broth and bring to a gentle boil. Reduce the heat to low, cover, and simmer until the rice is nearly tender.
- Scatter the broccoli florets over the rice. Cover again and continue cooking until the broccoli is tender and the rice has absorbed the liquid.
- Add the butter, milk, and shredded cheddar cheese. Stir until the butter and cheese melt and the rice is creamy.
- Remove from the heat and let rest for a few minutes. Stir once more and serve warm.
Notes
For extra cheesy rice, add additional shredded cheddar just before serving and allow it to melt over the top.
Bell peppers, peas, carrots, mushrooms, spinach, or cauliflower can be added for extra vegetables. Add quick-cooking vegetables near the end.
Add smoked paprika for smoky flavor or red pepper flakes for a little heat.
Monterey Jack, Colby Jack, mozzarella, or a combination of cheeses can replace the cheddar.
Cooked chicken can be added later in the cooking process instead of raw chicken; heat it thoroughly before serving.
Frozen broccoli can be added directly from frozen toward the end of cooking.
Brown rice requires additional liquid and a longer cooking time; adjust according to the rice package directions.
If the rice remains firm after absorbing the broth, add a small amount of warm broth or water, cover, and cook over low heat until tender.
Store cooled leftovers in an airtight container in the refrigerator for up to 3–4 days.
Reheat with a splash of milk or chicken broth to restore the creamy texture. Freezing is not recommended because the rice and broccoli may soften after thawing.
