Description

Indulge in these delicious Oreo Cheesecake Cookie Cups, featuring a buttery cookie crust, creamy cheesecake filling, and a crunchy Oreo topping. Perfect for parties and special occasions, these cookie cups are a delightful fusion of cookies and cheesecake.

Ingredients

For the Cookie Cups:

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

12 Oreo cookies

For the Cheesecake Filling:

8 oz cream cheese, softened

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

6 Oreo cookies, crushed

For the Topping:

Whipped cream

Additional crushed Oreos

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin or line it with paper liners.
  2. Prepare the Cookie Cups: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Place one whole Oreo cookie at the bottom of each muffin cup. Divide the cookie dough evenly among the muffin cups, pressing it down slightly to form a cup shape around the Oreo.
  3. Prepare the Cheesecake Filling: In a medium bowl, beat the softened cream cheese until smooth. Add the granulated sugar, egg, and vanilla extract, and continue to beat until well combined. Fold in the crushed Oreos.
  4. Assemble the Cookie Cups: Spoon the cheesecake filling over the cookie dough in the muffin cups, filling each cup to the top.
  5. Bake: Bake for 15-18 minutes, or until the edges are golden and the centers are set. Allow the cookie cups to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
  6. Top and Serve: Once cooled, top each cookie cup with a dollop of whipped cream and additional crushed Oreos.

Notes

Ensure the cream cheese is fully softened to avoid lumps in the cheesecake filling.

For a unique twist, experiment with different Oreo flavors or add a layer of chocolate ganache.
