Description

This moist and tender Pineapple Bread is packed with sweet tropical pineapple flavor, a hint of vanilla, and a beautifully golden crust. An easy homemade quick bread perfect for breakfast, brunch, snacks, or dessert.

Ingredients

1 cup crushed pineapple, preferably packed in juice

2 large eggs

1/2 cup vegetable oil

3/4 cup granulated sugar

1/4 cup light brown sugar, packed

2 cups all-purpose flour

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

Butter or cooking spray, for greasing the loaf pan

Instructions

  1. Preheat the oven to 325°F (163°C). Lightly grease a loaf pan with butter or cooking spray, or line it with parchment paper for easy removal.
  2. In a large mixing bowl, lightly beat the eggs until combined. Add the crushed pineapple and vegetable oil, stirring until evenly incorporated.
  3. Add the granulated sugar and light brown sugar. Stir until thoroughly combined, breaking up any lumps of brown sugar.
  4. Add the all-purpose flour, vanilla extract, baking soda, baking powder, and salt. Gently fold everything together with a spatula or wooden spoon until no large streaks of dry flour remain. Avoid overmixing to keep the bread tender.
  5. Pour the batter into the prepared loaf pan. Spread it evenly and smooth the top with a spatula.
  6. Bake in the preheated oven for 65–70 minutes, or until the top is golden and a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, loosely cover it with aluminum foil during the final portion of baking.
  7. Remove the bread from the oven and let it cool in the pan for approximately 10 minutes. Transfer to a wire rack and allow it to cool completely before slicing. Cut into 12 slices and serve.

Notes

Ingredient quantities are estimated because the source recipe does not provide exact measurements. The original baking time and calorie estimate may need adjustment for these quantities.

Use crushed pineapple packed in juice rather than heavy syrup for a balanced tropical sweetness. The amount of pineapple juice to include should be adjusted to maintain a thick quick-bread batter.

For coconut pineapple bread, fold shredded coconut into the batter before baking.

For added crunch, mix in chopped walnuts or pecans.

For pineapple banana bread, add mashed ripe banana and adjust the other wet ingredients to prevent excess moisture.

For a sweeter dessert, drizzle the cooled loaf with a glaze made from softened cream cheese, powdered sugar, milk, and vanilla extract.

Add a little ground cinnamon for a warm, aromatic variation, or fold in white chocolate chips for extra sweetness.

Avoid overmixing the batter, as this can produce a dense or tough loaf.

If using fresh pineapple, finely chop or crush it to resemble canned crushed pineapple and avoid excessively large pieces.

Store completely cooled bread tightly wrapped or in an airtight container at room temperature for up to 2 days, or refrigerate for 5–7 days.

Freeze individual slices or the entire loaf, tightly wrapped, for up to 3 months. Thaw in the refrigerator or at room temperature.

To reheat, microwave an individual slice for 10–15 seconds or warm in a 300°F (150°C) oven for 5–10 minutes.

Serve plain, slightly warm with butter or cream cheese, or alongside coffee or tea.
