Ingredients

1/2 cup raw pumpkin seeds

1/2 cup raw sunflower seeds

1/4 cup ground flaxseeds

1/4 cup sesame seeds

1 cup old-fashioned oats

1/2 cup natural almond butter (or peanut butter)

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

Pinch of salt

Instructions

  1. In a food processor, pulse the pumpkin seeds and sunflower seeds until finely ground.
  2. In a large mixing bowl, combine the ground seeds, ground flaxseeds, sesame seeds, oats, almond butter, honey (or maple syrup), vanilla extract, and a pinch of salt. Mix until well combined.
  3. Roll the mixture into 1-inch balls using your hands or a cookie scoop.
  4. Place the energy bites on a baking sheet lined with parchment paper and refrigerate for 30 minutes to firm up.
  5. Store in an airtight container in the refrigerator for up to 1 week, or freeze for longer storage.
