Description

Juicy shrimp, melted cheddar and mozzarella, and crispy garlic-buttered sourdough come together in this rich and comforting grilled cheese sandwich. Perfect for a quick lunch or cozy dinner, it delivers bold flavor in every bite.

Ingredients

8 large shrimp, peeled and deveined

4 slices sourdough bread

1/2 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

2 tablespoons butter

2 tablespoons garlic butter

1 tablespoon olive oil

Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Season the shrimp with salt and pepper and cook for 2 to 3 minutes per side until pink and fully cooked. Set aside.
  3. Spread the garlic butter evenly over one side of each slice of sourdough bread.
  4. Place two slices of bread, garlic-buttered side down, onto a preheated skillet or griddle.
  5. Layer the mozzarella cheese, cheddar cheese, and cooked shrimp evenly over the bread.
  6. Top with the remaining bread slices, garlic-buttered side facing up.
  7. Grill for 4 to 5 minutes per side until the bread is golden brown and crispy and the cheese has melted.
  8. Serve warm with extra garlic butter for dipping if desired.

Notes

Substitute pepper jack, Monterey Jack, Gruyère, or provolone for different flavor variations.

Add crispy caramelized onions, spinach, or sliced tomatoes for extra texture and flavor.

Season the shrimp with Cajun seasoning or smoked paprika for a spicy twist.

Store leftovers in an airtight container in the refrigerator for up to 2 days.

Reheat in a skillet or air fryer for the crispiest results. Avoid microwaving if possible.

Frozen shrimp may be used if fully thawed and patted dry before cooking.
