Description

Sweet onions are cooked until meltingly tender in a rich buttery broth seasoned with Cajun spices, garlic, and smoky paprika. This easy side dish delivers bold Southern-inspired flavor with minimal effort.


Ingredients

3 large sweet onions

4 oz unsalted butter, cut into pieces

6 tbsp beef broth

2½ tsp Cajun seasoning

1 tsp garlic powder

½ tsp smoked paprika

½ tsp crushed red pepper flakes

Black pepper, to taste

Salt, to taste


Instructions

  1. Peel the onions and slice off the tops.
  2. Core each onion about 1 to 1½ inches deep to create a cavity for the seasonings and butter.
  3. Place each onion on a sheet of heavy-duty aluminum foil.
  4. Divide the butter, beef broth, Cajun seasoning, garlic powder, smoked paprika, crushed red pepper flakes, and black pepper among the onions, filling each cavity.
  5. Wrap each onion tightly in foil to seal in moisture and flavor.
  6. Grill or smoke at 350–375°F for 60–75 minutes, or bake at 375°F for 70–80 minutes, until the onions are very soft and tender.
  7. Carefully unwrap the foil packets and stir the buttery sauce into the softened onions.
  8. Taste and adjust salt or additional Cajun seasoning if desired.
  9. For extra flavor, place the opened foil packets over direct heat for 5–8 minutes to lightly caramelize the onion edges before serving.

Notes

Substitute chicken broth for a lighter flavor.

Add shredded cheddar cheese during the final minutes of cooking for a cheesy variation.

Mix in cooked smoked beef sausage before serving for extra smokiness.

Increase the crushed red pepper flakes for additional heat.
