Description

Spicy Grilled Corn is a quick summer side dish with smoky char, buttery chili seasoning, garlic, and a bright squeeze of fresh lime.


Ingredients

4 ears of corn, husked

2 tablespoons butter, melted

1 teaspoon chili powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

Pinch of cayenne pepper, optional

Lime wedges, for serving


Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, combine the melted butter, chili powder, paprika, salt, black pepper, garlic powder, and cayenne pepper, if using.
  3. Brush the ears of corn generously and evenly with the spicy butter mixture, coating all sides.
  4. Place the corn directly on the grill and cook for 8–10 minutes, turning occasionally, until the kernels are tender and lightly charred.
  5. While grilling, brush the corn with any remaining spicy butter mixture for extra flavor.
  6. Remove the corn from the grill and squeeze fresh lime juice over each ear. Serve hot.

Notes

For milder corn, omit the cayenne pepper or reduce the chili powder.

For extra heat, increase the cayenne pepper or add crushed red pepper flakes.

For a cheesy variation, sprinkle the hot grilled corn with Parmesan, cotija, or crumbled feta.

Fresh cilantro or parsley can be added before serving, and smoked paprika can replace regular paprika for extra smoky flavor.

If an outdoor grill is unavailable, cook the corn on a grill pan or under the broiler, turning regularly until tender and charred.

For a creamy variation, spread a thin layer of mayonnaise or sour cream over the grilled corn before adding lime and extra seasoning.

Store cooled leftovers in an airtight container in the refrigerator for up to 3–4 days. Reheat on the grill, in a skillet, or in the microwave.
