Description

Ingredients

8 ounces cream cheese, softened

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup fresh strawberries, diced

2 tablespoons granulated sugar

1 1/2 cups crushed shortbread cookies or graham crackers

1/4 cup unsalted butter, melted

6 large crepes or thin cake layers

Powdered sugar, for dusting


Instructions

  1. Beat the softened cream cheese, 1/4 cup granulated sugar, and vanilla extract until smooth and creamy.
  2. In a separate bowl, whip the heavy cream until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  4. Toss the diced strawberries with 2 tablespoons granulated sugar and let stand for 10 minutes.
  5. Mix the crushed shortbread cookies or graham crackers with the melted butter until evenly moistened.
  6. Lay a crepe on a flat surface and spread an even layer of cheesecake filling, leaving a small border around the edges.
  7. Sprinkle with buttery cookie crumbs, then add a layer of drained macerated strawberries.
  8. Roll the crepe tightly into a log.
  9. Repeat with the remaining crepes and filling ingredients.
  10. Wrap each roll tightly in plastic wrap and refrigerate for at least 1 hour.
  11. Slice each chilled roll into approximately 1-inch pieces.
  12. Arrange on a serving platter and dust with powdered sugar before serving.

Notes

Use store-bought crepes for convenience.

Drain excess strawberry juice to prevent soggy rolls.
