Ingredients

4 slices of your favorite bread (sourdough or ciabatta work well)

1/2 cup ricotta cheese

1/4 cup sun-dried tomatoes, chopped

1 cup fresh spinach leaves

1/2 cup shredded mozzarella or provolone cheese

2 tablespoons unsalted butter, softened

Salt and pepper to taste

Instructions

  1. Prepare the Filling: In a small bowl, mix the ricotta cheese with the chopped sun-dried tomatoes. Season with salt and pepper to taste.
  2. Assemble the Sandwiches: Spread the ricotta mixture evenly over two slices of bread. Top with fresh spinach leaves and a layer of shredded mozzarella or provolone cheese. Place the other slices of bread on top to form sandwiches.
  3. Butter the Bread: Spread softened butter on the outside of each slice of bread.
  4. Cook the Sandwiches: Heat a large skillet or griddle over medium heat. Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
  5. Serve: Remove the sandwiches from the skillet, slice in half, and serve hot.

Notes

For a different flavor profile, experiment with various cheeses such as cheddar or Gruyère.

To keep the bread crispy during storage, place a paper towel inside the container to absorb excess moisture.

If you want to make this gluten-free, use gluten-free bread.
