Ingredients
4 slices of your favorite bread (sourdough or ciabatta work well)
1/2 cup ricotta cheese
1/4 cup sun-dried tomatoes, chopped
1 cup fresh spinach leaves
1/2 cup shredded mozzarella or provolone cheese
2 tablespoons unsalted butter, softened
Salt and pepper to taste
Instructions
- Prepare the Filling: In a small bowl, mix the ricotta cheese with the chopped sun-dried tomatoes. Season with salt and pepper to taste.
