Ingredients
1 1/2 cups warm water (110°F/45°C)
2 1/4 teaspoons active dry yeast (1 packet)
1 tablespoon granulated sugar
4 cups all-purpose flour
1 teaspoon salt
1/4 cup baking soda
2 cups water (for baking soda bath)
4 tablespoons unsalted butter, melted
Coarse sea salt, for sprinkling
Instructions
- Combine warm water, yeast, and sugar in a large mixing bowl. Stir and let sit for 5 minutes until foamy.
- Add flour and salt to the yeast mixture, mixing until a dough forms. Knead on a floured surface for about 5 minutes until smooth and elastic.
- Shape dough into a ball, cover with a clean towel, and let rest for 10 minutes.
- Preheat the oven to 425°F (220°C). Line two baking sheets with parchment paper.
- Divide dough into six portions and roll each into ropes. Cut ropes into bite-sized pieces.
- In a saucepan, simmer 2 cups of water and stir in baking soda. Dip pretzel bites in this bath for 20-30 seconds, then place on baking sheets.
- Brush with melted butter and sprinkle with coarse sea salt.
- Bake for 12-15 minutes until golden brown. Optionally, brush with additional butter.
- Serve warm with your favorite dipping sauces.
