Description

Thiakry à la Mangue is a creamy West African-inspired dessert made with tender fine couscous, rich dairy, orange blossom water, and sweet ripe mango. Served well chilled, it is fragrant, refreshing, and easy to prepare ahead.


Ingredients

100 g fine couscous semolina

1 plain yogurt

200 g heavy cream

250 g fromage blanc

100 g sweetened condensed milk

1 packet vanilla sugar

1 tablespoon orange blossom water

1 ripe mango

10 cl (100 ml) water


Instructions

  1. Bring 10 cl (100 ml) of water to a boil. Place the fine couscous semolina in a large heatproof bowl, pour the boiling water over it, cover, and leave until the couscous has absorbed the water and become tender.
  2. In a separate bowl, whisk together the plain yogurt, heavy cream, fromage blanc, sweetened condensed milk, vanilla sugar, and orange blossom water until smooth and creamy.
  3. Fluff the tender couscous thoroughly with a fork, separating any clumps to create a light texture.
  4. Gradually fold the creamy yogurt mixture into the couscous, stirring gently until the grains are evenly coated and the mixture is creamy.
  5. Cover and refrigerate the Thiakry for at least 1 hour, or until thoroughly chilled.
  6. Just before serving, peel the mango and cut the flesh into cubes or thin slices. Divide the chilled Thiakry among individual bowls or glasses and top generously with fresh mango.

Notes

For a tropical variation, add pineapple, passion fruit, papaya, or banana alongside the mango.

For extra texture, top with toasted coconut flakes, crushed roasted peanuts, almonds, or pistachios.

For a lighter version, replace part of the heavy cream with additional plain yogurt or fromage blanc.

Reduce the sweetened condensed milk for a less sweet dessert.

Lemon or lime zest, cinnamon, or cardamom can be added sparingly for a different flavor.

Thick plain or Greek-style yogurt can replace fromage blanc if needed.

Store leftovers in an airtight container in the refrigerator for 2 to 3 days. For best results, store the mango separately and add it before serving.

If the Thiakry thickens after chilling, stir in a little yogurt, cream, or milk before serving.

Frozen mango can be used if thawed completely and drained of excess liquid.

Serve cold. Reheating and freezing are not recommended.
