Tropical Coconut & Mango Tiramisu

Description

A refreshing no-bake tiramisu layered with coconut-soaked ladyfingers, airy mascarpone cream, ripe mango, and shredded coconut. It is rich, fruity, and perfect for making ahead.


Ingredients

3 large eggs

100 g granulated sugar

250 g mascarpone cheese

30 cl coconut milk, divided

1 teaspoon vanilla extract

1 ripe mango, peeled and diced

20 ladyfinger biscuits

20 g shredded coconut


Instructions

  1. Separate the egg whites from the egg yolks and place them in two clean bowls.
  2. Beat the egg yolks with the granulated sugar until pale, thick, and creamy.
  3. Add the mascarpone cheese, 20 cl of the coconut milk, and vanilla extract to the yolk mixture. Mix until smooth.
  4. In a separate clean bowl, whip the egg whites until stiff peaks form. Gently fold them into the mascarpone mixture, taking care not to deflate the cream.
  5. Peel and pit the mango, then cut the flesh into small cubes.
  6. Pour the remaining 10 cl coconut milk into a shallow bowl. Quickly dip each ladyfinger into the coconut milk, moistening it without allowing it to become soggy.
  7. Arrange a layer of dipped ladyfingers in the bottom of a serving dish or individual dessert glasses. Spread with some of the mascarpone cream and scatter diced mango over the top.
  8. Repeat the layers of ladyfingers, mascarpone cream, and mango until the ingredients are used, finishing with a layer of mascarpone cream.
  9. Sprinkle the shredded coconut evenly over the top.
  10. Cover and refrigerate for at least 4 hours, or preferably overnight, before serving chilled.

Notes

Dip the ladyfingers very quickly in coconut milk to prevent them from becoming soggy.

For additional food-safety assurance when making a dessert with uncooked eggs, use pasteurized eggs.

Frozen mango can replace fresh mango if thawed and thoroughly drained before use.

Replace some or all of the mango with well-drained diced pineapple for a pineapple-coconut variation.

Add fresh passion fruit pulp between the layers for a tart contrast.

For deeper coconut flavor, lightly toast the shredded coconut and allow it to cool completely before adding it.

The tiramisu can be assembled in individual glasses for easy serving.

Keep leftovers tightly covered and refrigerated and enjoy within 1 to 2 days.

Serve chilled and do not reheat.
