Description

These Two Ingredient Waffles are light, naturally sweet, and naturally gluten-free, made with just ripe bananas and eggs. They cook up soft and fluffy in minutes, making them a quick and satisfying breakfast.

Ingredients

2 ripe bananas

4 large eggs

Instructions

  1. Preheat the waffle maker according to the manufacturer’s instructions.
  2. Mash the ripe bananas in a mixing bowl until mostly smooth.
  3. Whisk the eggs into the mashed bananas until the batter is completely combined and easy to pour.
  4. Lightly grease the waffle maker if needed to prevent sticking.
  5. Pour enough batter into the waffle maker to cover the surface without overflowing.
  6. Cook until the waffles are fully set and lightly golden.
  7. Carefully remove the waffles and serve warm with fresh fruit, maple syrup, yogurt, nut butter, or your favorite toppings.

Notes

Add a pinch of cinnamon or a splash of vanilla extract for extra flavor.

Mix in a few tablespoons of rolled oats or chia seeds for added texture.

Top with peanut butter, strawberries, blueberries, chopped nuts, or honey.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Freeze for up to 2 months and reheat in a toaster, oven, or air fryer for the best texture.
