Description

Ingredients

1 1/2 cups all-purpose flour

1 cup granulated sugar

1 1/2 teaspoons baking powder

1/4 teaspoon salt

1 cup water

1/4 cup neutral oil

1 tablespoon vanilla extract

1/2 cup vegan butter, softened

1 1/2 cups powdered sugar

1 teaspoon vanilla extract

1 tablespoon plant-based milk


Instructions

  1. Preheat the oven to 340°F (170°C) and line an 8-inch square baking pan with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the water, oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just smooth.
  5. Transfer the batter to the prepared pan and spread evenly.
  6. Bake for 35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool completely in the pan.
  8. For the frosting, beat the vegan butter, powdered sugar, vanilla extract, and plant-based milk until smooth and creamy.
  9. Spread the frosting evenly over the cooled cake.
