Ingredients

1/2 cup finely chopped maraschino cherries, dried between paper towels for 30 minutes

3/4 cup + 2 tablespoons marshmallow cream

1 drop pink food coloring


Instructions

  1. Line an 8×8-inch pan with parchment paper and set aside.
  2. Pat the chopped maraschino cherries dry with paper towels to remove excess moisture.
  3. In a medium saucepan, combine butter, sugar, heavy cream, and salt. Stir over medium-high heat until the sugar and butter have melted.
  4. Bring the mixture to a boil, then insert a candy thermometer. Stir frequently until the thermometer reads 235°F (soft-ball stage).
  5. Remove from heat and stir in white chocolate chips and marshmallow cream until smooth.
  6. Add pink food coloring and mix until evenly distributed. Gently fold in the dried cherries.
  7. Pour the fudge mixture into the prepared pan and spread evenly with a spatula.
  8. Let the fudge set at room temperature for 3-4 hours until firm.
  9. Once set, cut into 1-inch squares and serve.

Ensure the maraschino cherries are thoroughly dried to avoid excess moisture that can affect the fudge’s texture.

For a more vibrant color, you can adjust the amount of pink food coloring as desired.
