Description
This Homemade Mexican Pizza combines crispy flour tortillas with seasoned ground beef, creamy refried beans, enchilada sauce, melted cheese, and fresh toppings for a flavorful Tex-Mex meal. It’s easy to make, perfect for sharing, and great for busy weeknights.
Ingredients
1 pound lean ground beef
1 packet (1 ounce) taco seasoning
1/2 cup water
6 medium flour tortillas
1 can (16 ounces) refried beans
1 can (10 ounces) red enchilada sauce
1 cup shredded cheddar cheese
1 cup shredded pepper-jack cheese
1 Roma tomato, diced
1 green onion, diced
1 small can sliced black olives
Instructions
- Preheat the oven to 375°F (190°C) and lightly spray two baking sheets with non-stick cooking spray. Arrange three tortillas on each baking sheet.
- Bake the tortillas for 3 to 5 minutes, flip them, and bake for another 2 to 5 minutes until golden and crispy. Remove and set aside.
- Brown the ground beef in a large skillet over medium-high heat, breaking it into crumbles. Drain excess grease.
- Stir in the taco seasoning and water. Bring to a boil, reduce the heat, and simmer for 10 minutes.
- Warm the refried beans until soft and easy to spread.
- Spread a thin layer of refried beans over one crispy tortilla, top with one-third of the seasoned beef, and place a second crispy tortilla on top.
- Spread about 3 tablespoons of enchilada sauce over the top tortilla, then sprinkle with cheddar cheese, pepper-jack cheese, diced tomato, green onion, and sliced black olives.
- Repeat to make three Mexican pizzas.
- Bake the assembled pizzas for about 5 minutes, or until the cheese is melted and bubbly.
- Cool for a few minutes, slice, and serve.
Notes
Substitute ground turkey or shredded chicken for a lighter option.
For a vegetarian version, replace the beef with black beans or seasoned vegetables.
Add jalapeños, avocado, cilantro, or sour cream after baking for extra flavor.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat in a 350°F (175°C) oven or air fryer for 5 to 8 minutes to restore crispiness.
Freeze the cooked beef separately for best texture when making ahead.
