Ingredients

lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

4 medium potatoes, peeled and diced

3 medium carrots, peeled and sliced

2 celery stalks, sliced

1 medium onion, chopped

3 cloves garlic, minced

3 cups chicken broth

2 tablespoons tomato paste

1 teaspoon dried thyme

Fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken pieces, potatoes, carrots, celery, onion, and garlic in the slow cooker.
