Ingredients
1 lb ground beef
1 medium onion, chopped
1 cup carrots, sliced
1 cup celery, sliced
1 cup frozen peas
2 cups cooked egg noodles
1 can cream of mushroom soup
1/2 cup milk
1 cup shredded cheddar cheese, divided
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Heat a large skillet over medium heat and cook the ground beef with the chopped onion until browned, breaking the meat apart as it cooks.
- Add the carrots, celery, and frozen peas. Cook for 3 to 5 minutes until slightly softened.
- Stir in the cooked egg noodles, cream of mushroom soup, and milk until fully combined.
- Mix in 1/2 cup of shredded cheddar cheese and stir until melted into the mixture.
- Transfer the mixture into the prepared baking dish and spread evenly.
- Sprinkle the remaining cheddar cheese over the top.
- Bake for 25 to 30 minutes until the casserole is hot and the cheese is golden and bubbly.
- Let the casserole cool for a few minutes before serving.
Notes
Add mushrooms, corn, or diced bell peppers for extra flavor and texture.
Ground turkey can be used instead of beef for a lighter version.
