Description

Warm Tomato Burrata Dip is a rich and comforting appetizer made with roasted cherry tomatoes, creamy burrata, Parmesan, and fresh herbs. Served with crispy toasted baguette slices, it’s an elegant yet easy dish that’s perfect for entertaining or sharing.


Ingredients

20 oz cherry tomatoes

1/3 cup extra virgin olive oil

1 tsp sea salt or kosher salt

1/2 tsp freshly ground black pepper

1/2 tsp red pepper flakes

23 cloves garlic, minced

1 1/2 tsp dried parsley

1 1/2 tsp dried oregano

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

8 oz burrata cheese

1/2 cup shaved Parmesan cheese

1 French baguette, sliced

6 tbsp butter

1/4 cup roasted pine nuts (optional)


Instructions

  1. Preheat the oven to 425°F (220°C) and position the oven rack in the center.
  2. Place the cherry tomatoes in a 10-inch cast iron skillet or an 8×8-inch baking dish. Add the olive oil, salt, pepper, red pepper flakes, garlic, dried parsley, and dried oregano. Toss until evenly coated.
  3. Bake for about 25 minutes until the tomatoes soften and release their juices.
  4. While the tomatoes roast, chop the fresh parsley and basil, shave the Parmesan, butter the baguette slices, and arrange them on a baking sheet.
  5. Toast the baguette slices for about 5 minutes until lightly golden and crisp.
  6. Remove the tomatoes from the oven and carefully spoon out about half of the excess liquid.
  7. Add the burrata, half of the fresh herbs, and half of the Parmesan. Gently stir until the burrata melts into the warm tomato mixture.
  8. Sprinkle the remaining herbs and Parmesan over the top. Add roasted pine nuts if desired.
  9. Serve immediately with the warm toasted baguette slices.

Notes

Substitute fresh mozzarella if burrata is unavailable for a slightly firmer texture.

Add chopped sun-dried tomatoes for deeper tomato flavor.

Finish with a drizzle of balsamic glaze for a sweet and tangy touch.

Serve with crackers, crostini, grilled sourdough, pita chips, or fresh vegetables.

Store leftover dip in an airtight container in the refrigerator for up to 3 days.

Reheat in a 350°F (175°C) oven for 10–15 minutes or microwave in short intervals until warmed through.

Do not freeze, as the burrata may lose its creamy texture.
